The leaves are picked by hand and picked on large trees between March 15 and April 10, if it has not rained and the leaves are dry. The terminal, fluffy bud is generally harvested with the first two young shoots, with large leaves. No pink bud is allowed in the crop and the shoots should be neither too long nor too short. Partially open leaves or those damaged by wind, handling or insects are rejected and used for an underclass. The best Bai Mu Dan is produced using the ratio of two leaves to one bud and is naturally or mechanically dried to produce leaves that are neither black nor red but green in color.
